What Makes Bilona Ghee Special, and How to Check Its Authenticity?

Bilona ghee authenticity is really two separate questions that get treated as one. Is the ghee pure, meaning not cut with cheaper fat? And was it genuinely made the bilona way, from curd, hand-churned, slow-cooked, or is "bilona" just a word on the label? The first you can answer at home tonight, with a spoon and a hot pan. The second you cannot. That gap is where most buyers get misled, and it's worth understanding before you spend on a premium jar.

What bilona means

Bilona is the wooden churner. The method named after it starts from curd, not cream. Milk is boiled, cooled, cultured into curd overnight, and only then churned until the butter separates out. That butter is clarified slowly over a low flame into ghee. It takes days, not hours.

Factory ghee skips all of it. Cream is spun out of milk in a centrifuge and boiled down within a few hours. That produces edible ghee, but it is a different product from bilona ghee no matter what the packaging claims. The full comparison, including milk ratios, is in factory ghee vs bilona ghee.

The curd stage is what produces the grainy danedar texture and the strong nutty aroma that real bilona ghee gives off when it hits a hot pan. Cream-based ghee usually has neither.

Why the method matters nutritionally

Culturing the milk into curd first removes a large share of the lactose and casein, which is why some people who react to ordinary dairy handle bilona ghee more comfortably. The butyric acid associated with gut health forms during the same slow culturing and clarification. Ayurveda has described ghee made this way as lighter and more digestible for centuries, and the modern nutritional reading of it broadly agrees.

The reason authenticity became a real concern

Ghee adulteration moved from background worry to headline in late 2024, when lab testing during the Tirupati laddu case reportedly found animal fat in ghee supplied to the temple. Food-safety departments in several states then began sampling ghee from ordinary retail, not just temple supply.

The lesson for a normal buyer was uncomfortable. Adulterated ghee does not look adulterated. Vanaspati, palm oil and reworked animal fat can match the colour, texture and rough smell of the real thing so closely that a supplier can hand over a compromised batch and have it clear every visual check a customer might do. Only a lab test separates them reliably.

Kitchen tests for ghee purity

These need nothing you don't already own, and each takes a few minutes.

Palm test. A small spoon of ghee on your palm should melt almost immediately from body heat and feel light and grainy. Ghee cut with other fats lingers and leaves a greasy film.

Pan test. Melt a teaspoon on low heat. Pure ghee turns clear golden-brown quickly and smells nutty. Early smoke, a waxy or flat smell, or a dark sticky residue means something else is in it.

Fridge test. Melt a spoonful and chill it for four to five hours. Pure ghee sets into one even grainy mass. Adulterated ghee separates into layers or sets unevenly, because the added oils firm up differently in the cold.

Water test. Drop melted ghee into warm water. Real ghee floats and holds together. Cut ghee tends to break up or cloud the water.

Smell test. Warm a little and rub it between your fingers. Real bilona ghee has a nutty, faintly sweet smell that stays on the skin. Anything chemical, plasticky or flat is a warning sign whatever the colour looks like.

Run two or three together rather than relying on one result. Ignore any home method that calls for concentrated acid or lab reagents, which belong in a lab and aren't needed to catch common adulteration.

What the kitchen tests cannot confirm

Every test above detects the same thing: cheap fat mixed into real ghee. None of them can tell you the milk came from an A2 breed, because A1 and A2 ghee are identical once clarified. And none can confirm a jar labelled "bilona" was actually churned from curd rather than spun from cream and relabelled.

Confirming those needs a lab. FSSAI's reference method for ghee adulteration uses the Baudouin test for vanaspati and hydrogenated fat, the Reichert-Meissl value, and a check for beta-sitosterol, which marks vegetable fat mixed into ghee. Three things to ask a seller

Ask for the lab report, not the licence. An FSSAI licence only proves the business is registered to trade. A NABL-accredited report on the actual product, covering A2 protein, fat percentage and absence of adulterants, is the stronger proof.

Ask the milk-to-ghee ratio. Genuine bilona ghee takes roughly 25 to 30 litres of milk per litre, because indigenous breeds give less milk than hybrid dairy cows and the curd-churn route loses yield. Check the price against the claim. A jar claiming both bilona and A2 at roughly supermarket-tin prices does not add up. That volume of milk and hand labour has a cost floor, and nobody clears it by being generous.

Common questions

Is bilona ghee the same as A2 ghee? No. Bilona is the method, curd churned and slow-cooked. A2 is the milk protein from certain native breeds. A ghee can be one without the other. Proper bilona ghee is usually made from A2-breed milk, since that's the milk the method developed around, but the two terms aren't interchangeable.

Why does my ghee look different from jar to jar? Real milk changes with season and feed, so colour and grain move around. Jars that look identical year-round are more likely from a large blended source than a fault to worry about.

Does bilona ghee need refrigeration? No. Keep it cool, dry, out of direct sun, with the lid closed. It stays stable for months at room temperature.

Is it worth the higher price? It depends on use. For daily cooking where sourcing matters to you, most people find the taste and texture difference clear enough to justify the cost. For occasional use, a decent factory ghee is fine and the bilona premium isn't necessary.
