A2 Bilona Ghee for Gut Health, Digestion and Immunity: What It Actually Does
Short answer first. A2 bilona ghee helps gut health in three ways that hold up: it supplies a small amount of pre formed butyric acid, it is almost entirely free of the lactose and casein that upset a lot of Indian stomachs, and it carries the fat soluble vitamins your immune system runs on. That is a genuinely useful daily fat.
It is not a gut treatment. We sell this stuff, and I still think half the claims made about it online are overstated.
Below is the honest version, including the parts that work against our own marketing.
The short version
- Ghee contains roughly 3 to 4 percent butyric acid, the short chain fatty acid your colon cells burn for fuel. Real, but small compared to what your gut bacteria make from fibre.
- Clarification strips out nearly all the milk solids, which is why most people who bloat on milk are fine with ghee.
- Because the casein is gone, the A1 versus A2 protein debate matters far less in ghee than it does in milk. Most brands will not tell you that.
- A2 sourcing still matters for ghee, just for a different reason: what the cow eats changes the fat.
- Immunity link is real and indirect. Ghee does not "boost" anything.
Butyric acid, and what ghee really contributes to gut health
Butyrate is the reason ghee shows up in every gut health article written since 2021. The biology behind it is solid. Colonocytes, the cells lining your large intestine, get somewhere around 60 to 70 percent of their energy from short chain fatty acids, and butyrate is the one they prefer. Well fed colon cells maintain the tight junctions between them, keep the mucus layer thick, and keep the barrier doing its job.
Ghee contains butyric acid directly. It is where the molecule got its name, from butyrum, Latin for butter.
Here is the part the wellness posts skip. Most of the butyrate that reaches your colon is not eaten. It is manufactured on site by bacteria fermenting fibre from your dal, your vegetables, your millets. Dietary butyrate from a spoon of ghee is bound up in triglycerides and largely absorbed high in the small intestine, well before it reaches the colon where the gut barrier work happens.
So a teaspoon of ghee on khichdi is a small deposit into a system that is mostly funded elsewhere. Useful, cheap, pleasant, and not a substitute for eating plants. If someone is selling you ghee as a fix for a fibre poor diet, and plenty of brands do it with a straight face and a chart showing butyrate concentrations, that is a sales pitch dressed up as physiology and you should read the rest of their claims with the same suspicion.
Where the direct source does earn its keep is for people who cannot tolerate a sudden fibre increase. Anyone managing IBS or coming off a restrictive elimination diet knows that "just eat more fibre" can backfire badly for a few weeks. A small, steady dietary source is gentler.
What clarification removes, and why your stomach notices
This is the underrated part, and it explains most of what people actually feel.

Making ghee means simmering butter until the water cooks off and the milk solids separate and settle. Those solids are where the lactose and the casein live. Strain them out and you are left with almost pure milk fat. That is why a large number of people who get bloated, gassy or crampy after a glass of milk can eat ghee daily without any of it.
Traditional bilona ghee goes one step further. The milk is set into curd first and churned, which means lactose has already been partly fermented by the culture before the butter is ever clarified. Cream separated factory ghee skips the curd stage entirely. Same category on the shelf, different process.
If you have a diagnosed dairy allergy rather than an intolerance, none of this is a green light. Trace protein residue is still residue, and an allergy responds to trace amounts. Talk to your doctor, not to a ghee blog.
So does the A2 part still matter for ghee?
Now the awkward bit.
The entire A1 versus A2 argument rests on beta casein. A1 beta casein has histidine at position 67, A2 has proline, and that single difference makes A1 more likely to release a peptide called BCM-7 during digestion. BCM-7 behaves like a mild opioid in the gut and has been linked to slower motility and more discomfort in some people. Human trials on A2 milk and digestive symptoms are reasonably encouraging. The European Food Safety Authority reviewed the literature in 2009 and concluded that a cause and effect relationship with chronic disease could not be established, and that conclusion has held up in later reviews.
But notice what the entire debate is about. Protein.
Ghee is fat. The protein was strained out in the pan, along with the lactose and the water and everything else that makes butter behave like a dairy product rather than a cooking oil, which is the entire point of clarifying it in the first place. Whatever your view of BCM-7, the mechanism barely applies to a properly clarified ghee, whether the milk that produced it was A1 or A2. Any brand telling you that A2 ghee is easier to digest because of the protein is borrowing an argument from milk and hoping you do not check.
We put an A2 claim on our own jars, so let me be precise about what it is worth. It matters, but not for the reason most people assume.

Indigenous cows like the Pahadi Gauri are not high yield animals. Nobody keeps them in a shed pushing volume. They are free grazing by default, walking rocky ground, eating wild grasses and herbs rather than a formulated feed mix. That diet is what changes the fat: more conjugated linoleic acid, more carotenoids, more vitamin A, a different fatty acid profile from commodity ghee made from pooled hybrid cattle milk. The A2 marker is a reliable proxy for that whole system. It is a signal about the animal and the pasture, and the fat is the thing you actually eat.

Digestion: bile, agni, and a fat that behaves under heat
Three separate things get bundled under "ghee helps digestion". They are worth pulling apart.
Fat entering the small intestine triggers bile release. Bile emulsifies fat and also has a mild stimulating effect on gut motility, which is the physiological logic behind the old habit of warm ghee in warm water first thing in the morning. For chronic sluggishness it can genuinely help. For someone who already feels heavy in the mornings, it usually just makes them feel worse. Half a teaspoon is plenty if you want to try it.
Ayurveda frames this as deepana and pachana, kindling the digestive fire and helping the body process what is already sitting there. The Charaka Samhita classifies ghee as Nityasevaniya Ahaara, food fit for daily use, which is not a designation handed out casually. Read it directionally. It is a useful lens developed in a very different dietary world, not a dosage chart.
The third piece is the least mystical and probably the most relevant to daily life. Ghee has a high smoke point, somewhere north of 230°C for well made ghee, and its fatty acids are more stable than the polyunsaturated oils in most Indian kitchens. Refined sunflower and rice bran oil oxidise under a hot tawa, and oxidised fats are pro inflammatory. Replacing them with ghee for tempering and shallow frying lowers that load without changing anything else about your cooking.

The immunity link is real but indirect
You will see the line that 70 percent of your immune system lives in your gut. Immunologists argue about the exact number, and it depends on which cells you count, but the direction is not controversial. Gut associated lymphoid tissue is the largest immune compartment in the body, and the barrier between your gut contents and your bloodstream is where a great deal of immune decision making happens.
So anything that supports that barrier supports immune function, in a slow, structural way. Butyrate feeds the cells. The mucus layer stays intact. Bacterial fragments stay where they belong.
The second route is simpler. Vitamins A, D, E and K2 are fat soluble, meaning your body cannot absorb them without fat in the same meal. Vitamin A in particular is directly involved in mucosal immunity and the integrity of epithelial barriers. Ghee both contains these vitamins and acts as a carrier for the ones in the rest of your plate. A sabzi cooked in ghee gives up more of its beta carotene than the same sabzi cooked in water.
That is the honest version of "ghee builds immunity". No spoon of anything is going to stop you catching a cold. What a good fat does is make the rest of your food work properly, over months, which is a duller claim and a truer one.
How to actually use it
Nothing exotic here.
- One to two tablespoons a day for most healthy adults, replacing refined oil rather than joining it.
- Tempering, roti, rice, dal. Everyday cooking is where it does the most work, because that is where it displaces the oil you would otherwise use.
- With vegetables specifically, if you are thinking about vitamin absorption.
- Half a teaspoon in warm water on an empty stomach if your digestion runs slow. Skip it if it does not.
- Do not refrigerate it. Keep the jar dry, use a dry spoon, close the lid.
If you have high cholesterol or a diagnosed cardiovascular condition, this is a conversation to have with your cardiologist before you make ghee a daily habit. The research on traditional ghee and heart health is more interesting than the old saturated fat consensus suggests, but "more interesting" is not "settled", and it should not override clinical advice aimed at you specifically.

Yes, in a modest and specific way. It supplies pre formed butyric acid, the fuel colon cells prefer, and it is almost free of lactose and casein, so it sits well with people who react to milk. It supports gut health. It does not repair a gut on its own, and fibre from vegetables, dal and whole grains does far more of the heavy lifting.
Does ghee help with bloating and gas?
For people whose bloating comes from lactose or casein in milk, switching to ghee usually removes the trigger, because clarification takes those out. If your bloating comes from something else, IBS, SIBO, a food intolerance, or simply eating too fast, ghee will not address it. Adding a large quantity of any fat to a meal can also slow gastric emptying enough to make you feel heavier.
Can I eat ghee if I am lactose intolerant?
Most lactose intolerant people tolerate ghee without any issue, since almost all the lactose leaves with the milk solids. Bilona ghee made from cultured curd contains even less, because fermentation has already worked on the lactose. A dairy allergy is a different matter and needs medical advice.
Does A2 ghee digest better than regular ghee?
Not because of the A2 protein, which is largely absent from any properly made ghee. The realistic differences come from how it is made and what the cow ate. Traditionally churned ghee from free grazing cattle has a different fat profile from cream separated commodity ghee, and it is that, along with the absence of additives, that people are noticing.
Which ghee is best for gut health and immunity?
Look at the process rather than the label. Ghee made by curdling and churning the whole milk, clarified slowly, from cows that graze rather than eat formulated feed. Grainy danedar texture is a reasonable clue. There are also simple home tests for purity, and a batch level NABL lab report is better than all of them.
How long before I notice a difference?
Digestive comfort from switching away from milk or refined oil tends to show up within a couple of weeks. Anything involving the gut barrier or immune function works on a much longer timescale, and honestly you are unlikely to feel it as a discrete event. If a brand promises you a noticeable transformation in seven days, spend your money elsewhere.
